Noted scholars and academics then and now generally write them while working simultaneously at Museums and Universities. Many were done to coincide with planned exhibitions at various institutions and were sold as handbooks to the events. Today, objects from these old collections represent the core of many museum's most important holdings. Often acquired through estate bequests or directly purchases from collectors estates. Do not be surprised if you see some "Familiar Faces" as you browse.
Today, premiere dealers publish their own volumes on an annual or semiannual basis. Most make excellent references with levels of scholarship you'd expect to find only in museum tombs.
